This recipe creates a moist and flavorful apple cake studded with pecans, topped with a decadent caramel glaze.

Ingredients:

For the Cake:

  • 3-4 cups chopped apples (peeled and cored)
  • 1 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk

For the Caramel Glaze:

  • 1 cup brown sugar, packed
  • ½ cup heavy cream
  • ¼ cup butter
  • Pinch of salt

Instructions:

    1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or bundt pan.
    2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
    3. In a separate bowl, cream together softened butter and vanilla extract until light and fluffy. Beat in eggs one at a time, then stir in milk.
    4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in chopped apples and pecans.
    5. Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted near the center comes out clean.
    6. While the cake cools, prepare the caramel glaze. In a saucepan over medium heat, combine brown sugar, heavy cream, butter, and salt. Bring to a simmer and cook for 3-5 minutes, stirring constantly, until thickened.
    7. Let the cake cool slightly before drizzling with the caramel glaze. Enjoy!
