This recipe creates a moist and flavorful apple cake studded with pecans, topped with a decadent caramel glaze.
Ingredients:
For the Cake:
- 3-4 cups chopped apples (peeled and cored)
- 1 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- ¾ cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup milk
For the Caramel Glaze:
- 1 cup brown sugar, packed
- ½ cup heavy cream
- ¼ cup butter
- Pinch of salt

- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or bundt pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, cream together softened butter and vanilla extract until light and fluffy. Beat in eggs one at a time, then stir in milk.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in chopped apples and pecans.
- Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted near the center comes out clean.
- While the cake cools, prepare the caramel glaze. In a saucepan over medium heat, combine brown sugar, heavy cream, butter, and salt. Bring to a simmer and cook for 3-5 minutes, stirring constantly, until thickened.
