  • 2 cups of beef broth
  • 2 spoonfuls corn starch
  • Black pepper and seasoning salt.

Preparation

  • Rub flour over the cut of meat after seasoning it with salt and pepper.
  • Add the melted butter to a big saucepan over high heat.
  • Add the sirloin beef tips in sections and cook them until browned and crispy on every side.
  • Transfer to a platter and keep searing the meat until it’s done.
  • Add the chopped onion and simmer for a mere two minutes or so, scooping up any bits from the pan’s bottom with a spatula.

Choosing the Slow Cooker

  • Add the mushrooms, dried thyme and rosemary, bouillon cube, Worcestershire sauce, bay leaf, pepperoncini, and two cups of beef broth to the slow cooker along with the browned beef and onion.
  • Cook, covered, for 3 to 4 hours on the highest setting or 6–7 hours on the low.
  • Stir corn starch into three tablespoons of water about half an hour before the cooking period ends and pour into the slow cooker.

Choosing the Instant Pot / Pressure Cooker

  • Re-return the meat to the Instant Pot along with the onions, then add the ingredients mentioned above.
  • Shut the lid and choose the « Meat/Stew » option. Cook for 35 minutes under intense pressure.
  • Following the completion of the cooking process, allow the rising pressure to naturally dissipate for ten minutes before turning the valve that releases pressure to « venting » to let out any residual air.
  • Activate the « Sauté » option. Add corn starch to three tablespoons of water and mix it into the Instant Pot’s liquid mixture.
  • Stir until the gravy starts to thicken, then add salt and pepper to taste.
